Domaine J. Laurens 'Le Moulin' Blanquette de Limoux, N/V gruner fatty fishThis traditional Gaillacoise sparkling is made from 90% Mauzac, 5% Chenin Blanc, and 5% Chardonnay. It is vinified in the traditional method, and rests on its lees for 9 months before bottling. The fermentation and resting is done at extremely low temperatures to preserve the delicate fruit aromas and flavor profile this wine has to offer. Pair it with fried shrimp and ricotta stuffed zucchini blossoms.
