Daijirou, As Time Goes By, Nama, 720ml Hyakujuro this sake exemplifies the growthType: Kimoto Junmai Polijstgraad: 80% Rijstvariant: Tamasakae Alcoholpercentage: 16% As Time Goes By is ontstaan als een samenwerking tussen twee brouwerijen: Yasui shuzo en Hata shuzo. De Tamasakae rijst wordt samen aangekocht, samen gepolijst, en dan gaat iedere brouwer er apart mee aan de slag om er zijn eigen unieke touch aan te geven. De sake wordt niet meteen op de markt gebracht maar krijgt de ruimte om enkele jaren te rijpen in de brouwerij.
