The grapes are manually harvested and the skins kept on the juice for two to three weeks, with indigenous yeasts kickstarting fermentation. No temperature controls are used, extracting as much structure and tannin from the skins as possible. Bottled unfined and unfiltered to truly go all in on a natural expression of the Cataratto grape.
